Ok, so you are using ready-to-eat chicken here, but it's all in the interest of time. Warm up the chicken in the oven or microwave for extra flavour. Dried fruit and fresh mint is delicious with couscous.

  • 1 pack chicken breast, cooked & ready to eat, chilli flavour

  • 50 grams natural yoghurt

  • 2 spring onions

  • 0.5 bunch fresh mint

  • 100 grams moroccan flavoured couscous

  • 6 dried apricots

  • 2 tablespoons raisins

for cooking 2 servings

  • small saucepan

  • large mixing bowl

instructions

 

1. Using the small saucepan prepare the couscous following the instructions on the pack.

2. Chop the chicken breasts into bite-size pieces and throw into the mixing bowl.
(if you like, heat up the chicken in the microwave for a couple of minutes before chopping it)

3. Chop up 6 dried apricots, 2 spring onions and the bunch of fresh mint. Add all of them to the mixing bowl with two tablespoons of raisins.

4. Add the couscous and mix well all of the ingredients.

5. Finally spoon 50g of natural yoghurt and coat the salad in it.

To serve - Simply spoon the salad into the serving bowls and enjoy.
