blackeye bean & feta cheese salad
The tartness of the feta cheese goes well with the slightly bitter yet warm flavour of cumin and the nuttiness of the black eye beans. Very simple to make, this dish hardly requires any cooking at all.
3. Melt a large knob of butter in the deep pan and when it starts to bubble add:
- the shallot
- 1 tablespoon of marjoram
- 1 teaspoon of cumin
- half teaspoon of paprika
Saute for a minute.
4. Drain the tin of blackeye beans. Put the beans in the deep pan, add 2 teaspoons of balsamic vinegar, mix well and cook for another 2-3 minutes, until they soften a little but don turn mushy.
5. Meantime chop up 6 artichokes.
6. Place the content of the pan and the artichokes in the mixing bowl. Mix well with the feta cheese and season with fresh black pepper.
To serve: arrange the salad leaves in a ring around the plate then spoon the beans and into the middle of the ring.
