Think of the first day of summer. It's finally warming up and you want to eat outside in your garden or on the patio. Even if you live in a flat that's in a middle of a busy city you'll have your windows wide open and enjoy the summer breeze. The Al fresco collection is about that breeze and recipes that I associate with long summer evenings.

  A green apple might not be on your list of obvious ingredients in a supper, but here it teams up beautifully with the haloumi cheese, creating a very fulfilling vegetarian dish.

  I got the inspiration for this dish while I was in Malaysia. I love the strong flavours of asian cuisine. Setting off the duck is a simply irresistible combination of fresh mango, ginger and red chilli.

  This delicious meal uses just a few ingredients, but be sure you buy good quality gammon: thickly cut, with little fat and nicely shaped. Curry-flavoured cauliflower makes this dish for me.

polenta coated lamb cutlets on cauliflower mash
  There is a bit of a hassle with dipping the cutlets in egg, flour and polenta but the rest of it is simple. Cauliflower mash makes a change from potatoes and the caraway seeds add a lovely spice.

  Quick and easy to make, this salad is full of wonderful flavours that are perfect in summer or when you are longing for one! Light and packed with goodness, it's very healthy - even with the cheese.
