A totally bizarre combination, yet all the flavours work beautifully together: the sweetness of mango with the hotness of chilli and a refreshing zing of lime that is ever so slightly hinted in the cream. Delicious!
2. Place 2 tablespoons of caster sugar into the little pan. Add 2 tablespoons of water and a pinch of chilli flakes. Heat it up and stir for about 3-4 minutes until the sugar melts and you get a syrupy consistency.
3. Spread 200g of mango pieces on the roasting tin, pour the syrup over them and place in the oven for 10 minutes.
4. Meanwhile mix 50ml of double cream with a pinch of sugar in the bowl and whisk it until whipped. Squeeze a lime wedge into the cream and mix it well.
5. Finely slice a little of lime zest for decoration.
To serve: arrange the mango pieces in the serving dishes and pour any remaining juices from the roasting tin on top. Decorate with a dollop of whipped cream and lime zest.
