Simply divine! This dessert is refreshing and zesty because of the wonderful tang of the passion fruit. Raisins bring an extra crunch to an otherwise very smooth texture.

  • 50 ml double cream

  • 100 grams natural greek yoghurt

  • 2 passion fruits

  • 1 large crunchy biscuit e.g. digestive

  • 1 tablespoon raisins

  • 15 grams butter

  • 2 tablespoons sugar

for cooking 2 servings

  • little saucepan

  • small mixing bowl

instructions

 

1. In the mixing bowl combine 50ml (3 tablespoons) of double cream with 100g (4 tablespoons) of Greek yoghurt and 2 tablespoons of sugar. Mix well until smooth and throw in a tablespoon of raisins. Set aside.

2. In the small pan melt a small knob of butter. Crush the biscuit and coat it with butter. Take it off the heat.

3. Fill the bottom of the serving glasses with the biscuit, pressing gently.

4. Cut 2 passion fruits in half.

5. Take the first two halves and place the pulp in the glasses, placing directly on top of the biscuit base.

6. Fill the glasses with the yoghurt mixture.

7. Decorate it with the rest of passion fruit.

8. Place in the fridge to chill for 15 minutes, or longer.
