I always thought tiramisu would take ages to make, but all you need is 15mins to create my version this fabulously rich desert! I love Baileys in it but you can use double cream instead.
1. Make the coffee and sweeten it with 2 teaspoons of sugar. Pour it into the Pyrex or any other shallow dish. Set aside.
2. In the small mixing bowl whisk 100g of mascarpone cheese and 50ml of Baileys. 3. Break the muffin into 4 pieces and dunk in the coffee.
4. Place one piece of muffin at the bottom of each serving glass and press it gently. Sprinkle with a few flaked almonds and place a layer of mascarpone mixture (about a quarter of it) on top. Repeat the process again: muffin, almonds, mascarpone mixture until you filled the glass.
5. Place in the fridge to chill for 15 minutes, or longer.
To serve: sprinkle with the coco powder immediately before serving (if you do so before you place the Tiramisu in the fridge the coco will dissolve)
